As the chill of winter fades and the mountains of Western North Carolina begin to bloom, local farms spring back to life with some of the season’s first fresh produce. Late April and early May mark the beginning of harvest season, and for food lovers, it’s one of the best times of year to reconnect with the land—and with local farmers—at your community farmers market.

Here in the Southern Appalachians, the cooler mountain climate means certain crops thrive early in the season. At this time of year, you’ll start to see a beautiful variety of fresh, nutritious, and locally grown items filling farmers market stands.


🌱 What’s In Season?


Lettuce & Salad Greens Crisp and colorful lettuces, spinach, arugula, and kale are among the earliest crops to be harvested. These leafy greens thrive in the cool spring air and are perfect for tossing together quick, healthy salads.


Radishes Bright and peppery, radishes mature quickly and are one of the first root vegetables to show up in early spring. They add crunch and color to your plate and pair beautifully with fresh butter or tangy vinaigrettes.


Green Onions & Chives These mild, fresh-flavored alliums are perfect for springtime cooking. Sprinkle them on eggs, soups, or roasted veggies for an instant burst of flavor.


Asparagus The queen of spring produce, asparagus is harvested right around late April through May in the mountains. It's tender, flavorful, and packed with nutrients—perfect grilled, roasted, or sautéed.


Strawberries Some of the season’s first sweet strawberries are at the farmers market! These ruby red gems are the stars of the late spring harvest and are eagerly awaited each year.


Herbs Fresh herbs like parsley, cilantro, mint, and dill begin to pop up in early May. They’re the secret to elevating your cooking with garden-fresh flavor.
